A Recipe for Banana Birthday Cake
Not your typical birthday cake, for not your average birthday. You don’t even have to eat our delicious vegan banana cake on a birthday at all. Indulge in this healthy treat that harnesses the natural sweetness of coconut, vanilla and banana, whenever you get a sugar craving. Did we mention there’s peanut butter?
Ingredients
Makes 24 pieces
- Muesli x 1 box
- Coconut milk x 1 can (330 mls)
- Cacao x 3 tablespoons
- Vanilla essence x 1 teaspoon
- Cinnamon x 1 teaspoon
- Palm sugar x 1/2 cup
- Bananas x 5
- Peanut butter x 3 tablespoons
Method
Take a pot and add the coconut cream, palm sugar, cacao, cinnamon & vanilla essence.
Put on medium heat for 1 minute & mix.
Remove from heat, add the muesli & mix.
Slice the bananas into quarter size pieces.
Add the peanut butter to a pan on medium heat for about 30 seconds until it melts to liquid.
Layer the muesli mix, then peanut butter and top with sliced bananas in a Tupperware box or tray.
Freeze for at least 4 hours.
Serve for a birthday, special occasion, or enjoy any time you like!
