Green Mango Salad

Sweet mango, fragrant basil and zesty lime make up this delicious traditional Asian salad. A Vagabond Temple favorite, it’s both easy to make and packed with flavor; perfect for a light and healthy lunch.

We like ours with a fiery kick but f you prefer less heat, reduce the amount of chilies. For extra crunch and protein, sprinkle with a handful of roasted peanuts.

Ingredients:

Serving: For 4-6 people

  • 2 Thai red chilies with seeds, chopped
  • 1 clove of garlic, crushed
  • 1/3 cup. palm sugar
  • 2 limes, juice only
  • 2 tsp palm sugar
  • 4 green mangoes, julienned
  • 2 carrots, julienned
  • 1 red onion, thinly sliced
  • 1 handful fresh holy basil, torn
  • Roasted peanuts, optional

Method:

In a small bowl mix together the lime juice, palm sugar, garlic and chopped chilies

Finely slice or julienne the green mango, carrots and red onion and add to a big bowl.

Pour the lime dressing over the mango and vegetable mixture, tear and add the basil and mix well until everything is coated. 

Serve with a wedge of fresh lime.
