Potato & Zucchini Ground Soup

In the dietary fibre world, the zucchini reigns king, and is the best source of dietary fiber of all the vegetables on Earth. But this king couldn’t make a healthy vegan soup alone, so he called on his friends the potato and tomato to make this soup a reality. Health-wise, potatoes are one of the most underrated foods. One humble potato delivers the following daily values: 51% vitamin C, 9% iron, 30% vitamin B-6, 12% magnesium and 25% of potassium needs. Potatoes are also a source of phosphorus, niacin, folate, choline, and zinc.

For 4-5 People

5 potatoes
4 zucchini
3 tomatoes
2 onions
5 garlic cloves
1/2 cane coconut cream

1 tablespoon salt
1 tablespoon black pepper
1 tablespoon oregano
1 tablespoon basil
1 tablespoon paprika
1 teaspoon chili
4 tablespoon oil

Cut all the vegetables roughly and fry them for 10 minutes. Add all of the spices and fry for 5 more minutes. Cover with water and cook it for 30 minutes. Use hand blender and grind the soup. Add the coconut milk before serving and cook for 3-4 minutes.
