Thai Baht Recipe (3 mins)

In this video, our head chef Martin shares a simple, healthy, and delicious recipe for the classic Thai Baht (serves 2-4 people).


1 zuccuni/ courgette
1 eggplant/ aubergine
10 button mushrooms
4 cloves garlic/ 1 spoon garlic puree
half red pepper
half yellow pepper
half green pepper
1 small onion
1 table spoon grounded coriander
1 spoon oregano
1 tablespoon sea salt
1 table spoon black pepper
1/2 tablespoon fine diced fresh ginger
1 stick of lemongrass
1 can coconut milk/ coconut cream
1/4 cup sweet chillie
1 table spoon fresh finely chopped parsley
1 lime
1 lemon


Firstly chop all ingredients to measurements above.

Put a little bit of olive oil or sunflower oil in the frying pan and turn on heat, add the onion, ginger, lemongrass, sea salt and grounded coriander.

Cook until onions are cooked but not yet turning brown
Add all other vegetables. cook until soft enough to eat, a little but of crunch is good!
Add coconut milk and sweet chillie and stir and bring to simmer.

Add all other ingredients and stir until all vegetables a cooked through. serve over rice and enjoy!
