Stir-Fried Morning Glory
Morning glory (tra kuen), is one of the most popular vegetables in Cambodia as it grows in abundance. The green stems and thin leaves have a slightly grassy flavour, quite similar to spinach. This delicious vegetable is rich in flavour and nutrition, so it’s especially perfect in vegan and vegetarian dishes.
Ingredients:
Serving: for 2 person
- 250g morning glory
- 1 large tomato
- 100g celery
- 50g edible flowers
- 1 inch piece of ginger
- 1 chilli
- 1 lime
- 3 cloves of garlic
- a pinch of salt
- a pinch of fennel seeds
- a pinch of garam masala
- a pinch of black pepper
Preparation:
Cut up the morning glory into 3 inch pieces. Chop the tomatoes and celery. Cut the ginger, garlic and chilli into thin slices.
Method:
Put the stove onto a high heat and add oil. Add ginger, garlic, tomato, salt and celery. Stir and let it simmer for 2 minutes. Add the morning glory, garam masala, black pepper, fennel seeds and chilli. Add water, stir and let it simmer for 2 minutes. Add edible flowers, lime juice and stir.
