Spicy Green Vegetables

Okra, winter melon and broccoli are the perfect green ingredients to form a tasty, nutritious vegetarian/ vegan meal. Combined with spices, this dish offers a sensory journey that will delight any palate.

 

Ingredients:
Serving: for 1 person

  • 150g okra
  • 50g winter melon
  • 50g broccoli
  • 1 onion
  • 4 garlic cloves
  • a pinch of salt
  • a pinch of black pepper
  • a pinch of garam masala
  • a pinch of sweet paprika
  • a pinch of curry powder
  • a pinch of cardamom
  • a pinch of coriander seeds
  • 2 large chilli’s (optional)
  • a glass of water (only use ¼)

 

Preparation:
Cut the winter melon into cubes. Break the broccoli into florets. Cut the onions into 1 inch pieces. Cut the garlic into thin slices.

 

Method:
Put the stove onto a high heat and add olive oil. Add the whole chilli, garlic, coriander seeds, cardamom and stir. Add onion, winter melon, stir, some of the water and let it simmer for 2 minutes. Add the okra, broccoli and stir. Then add salt, curry powder, garam masala, sweet paprika, the rest of the water and stir again. Let it simmer for 5 minutes, stirring occasionally.
