Whole Pan-Roasted Broccoli
Well prepared broccoli is succulent, firm and still has its’ natural bright green colour. It can be roasted in the oven or for a quick method, try pan-roasting your broccoli like we do at the temple. You’ll have flavourful broccoli that is gently infused with garlic and basil.
Ingredients:
Serving: for 1 person
- 1 small whole broccoli
- a handful of basil leaves
- 1 chilli
- 2 garlic cloves
- a pinch of fennel seeds
- a pinch of rosemary
- a pinch of thyme
- a pinch of salt
- a pinch of black pepper
- a glass of water (only use ¼)
Preparation:
Cut the chilli and garlic into thin pieces.
Method:
Put the stove onto a high heat and add oil. Add the fennel seeds, rosemary, thyme, place the whole broccoli upside down into the pan and then add water. Let the broccoli pan-roast on its head for 2 minutes. Add salt, black pepper, garlic, chilli and turn the broccoli the right way up. Add half of the basil leaves and let it pan-roast for another 2 minutes. Add more water, the rest of the basil leaves and pan-roast for an additional minute.
