Stir-Fried Vegetables

Stir frying is a Chinese cooking technique in which ingredients are fried in oil on a high heat, while being stirred. We’ve prepared a simple, yet delicious vegetable stir-fry recipe that includes a combination of fresh herbs and spices. Experiment with this recipe by using a variety of different vegetables with the same herbs and spices that we’ve used. You won’t be disappointed.

 

Ingredients:
Serving: for 1 person

  • 2 carrots
  • 1 green pepper
  • 1 onion
  • 100g coriander leaves
  • 2 garlic cloves
  • 1 chilli
  • a pinch of salt
  • a pinch of black pepper
  • a pinch of curry power
  • a pinch of sweet paprika
  • a pinch of rosemary
  • a pinch of thyme

 

Preparation:
Julienne or cut carrots into thicker pieces. Cut the green pepper and onion into 1 inch pieces. Cut the garlic and chilli into thin slices or chop roughly.

 

Method:
Put the stove onto a high heat and add oil. Add onion, garlic and let it brown. Add the carrots, green pepper, salt, black pepper, rosemary, thyme, sweet paprika and curry powder. Then add water, stir and let it simmer for 2 minutes. Add chilli, some more water, stir and let it simmer for 5 minutes. Add coriander and stir.

Serve and enjoy!
